Originally it was only wine that was processed in this way, but in countries that lacked wine people started using other kinds of fruit. Our ancestors used plums due to their sugar content and unique taste of spirit. Production of plum spirit became some kind of a local industry. Home production was very simple but also connected with great loss of quality and quantity of the product. However, a modern technology is not satisfied with this because it requires as much quality production as possible. To produce distillates is not simple. It is both a craft and an art, even a science. These all are intended to achieve ultimate and stable quality of products.
